Chilli Vinegar

Chillies Chillies

This is made in the same way as garlic vinegar, but produces a rather different result.  I use this vinegar with a little olive oil for dipping bread.

Ingredients

  • 5/6 whole ripe chillis, trimmed, cut in half and seeds removed.
  • 500ml cider vinegar, or white wine vinegar

Making Chilli Vinegar

  1. Put the chillis into a glass bottle (I use the glass bottles I buy the vinegar in)
  2. Bring the vinegar to the boil, and pour over the chillies
  3. Seal and store for at least a month
  4. Strain through muslin before using.
