- 8oz grated horseradish
- 1 shallot, finely chopped
- 1tsp salt
- 1/2 tsp cayenne pepper
- 2 litres vinegar
Making Horseradish Vinegar
- Mix the horseradish, shallot, salt and cayenne pepper together in a bowl.
- Bring the vinegar to the boil and pour it over the mixture.
- Cover the mixture and allow to stand, stirring daily for a week.
- Strain through a sieve into a saucepan.
- Bring to the boil again, then allow to cool slightly before pouring into warm clean bottles
