Shallots Shallots

This shallot vinegar adds an interesting twist to salad dressings, and combined with olive oil is great for dipping bread.


  • 100g shallots
  • 1l cider vinegar, or white wine vinegar

Making Shallot Vinegar

  1. Skin the shallots, chop them finely and put them into a wide necked bottle with the vinegar.
  2. Seal and shake daily for 10 days
  3. Strain through muslin, then put into bottles for use.
