Dried Red Chillies Dried Red Chillies

I’ve tried loads of chilli oils but this is one of my favourites


  • 1 litre of olive oil
  • 5 dried red chillies (more if you are a complete chillihead)
  • 1 tsp peppercorns (black or red)
  • 1 tsp coriander seeds
  • 1 Bay leaf
  • 3 garlic cloves, peeled
  • 1 star anise
  • ½ stick of cinnamon

Making Chilli Oil

  1. Use a tall sterilised bottle
  2. Add half a litre of the oil
  3. Put all the other ingredients in the bottle
  4. Top up with the remaining oil and shake lightly
  5. Seal and put away for two to three weeks
  6. Enjoy.

This won’t keep for ever, but once you’ve tried it, it won’t last long enough to worry about.
