Making Basil Oil
- Take a wide necked Kilner jar or similar
- Layer the basil leaves in the jar and sprinkle each layer with a small amount of salt
- Top up the jar with good quality olive oil and seal.
- Leave in the fridge for a week or so for the flavour to infuse.
- Strain the oil into a clean bottle - this is great for dressing salads and pizzas.
- The leaves can be used along with some of the oil and pine nuts to make pesto.
