This is a real Italian method of preserving Basil, and nothing could be simpler.


Making Basil Oil


  1. Take a wide necked Kilner jar or similar
  2. Layer the basil leaves in the jar and sprinkle each layer with a small amount of salt
  3. Top up the jar with good quality olive oil and seal.
  4. Leave in the fridge for a week or so for the flavour to infuse.
  5. Strain the oil into a clean bottle - this is great for dressing salads and pizzas.
  6. The leaves can be used along with some of the oil and pine nuts to make pesto.
