- 50 lavender flowers
- 300ml water
- 125g sugar
Making Lavender Coordial
- Put the sugar and water in a pan and heat gently until the sugar has dissolved.
- Add the lavender flowers and bring to the boil, then remove from the heat and leave to stand covered for 30mins to infuse.
- Strain, then bring back to the boil, then reduce the heat and keep stirring until the mixture is reduced and syrupy.
- Allow to cool, then pour into clean bottles and store in the fridge for use. If you want to store bottles for any length of time then they should be sterilised using a water bath.
