Pickled Horseradish Pickled Horseradish

This is a great way to preserve horseradish for use all year round in recipes, and of course for serving with roast beef!

  • Fresh horseradish
  • Cider vinegar
  • Salt
  • Sugar

Pickling Horseradish

  1. Clean and peel the horseradish
  2. Grate the horseradish and put in a clean sterilised jar… This is easier said than done as the fumes can bring tears to your eyes, and they are not the easiest vegetable to grate – if you have access to one use a food processor or electric grater.
  3. Sprinkle about 1tsp of salt and 1tsp of sugar per 340g jar.
  4. Top up with cider vinegar and seal.
