- Fresh horseradish
- Cider vinegar
- Clean and peel the horseradish
- Grate the horseradish and put in a clean sterilised jar… This is easier said than done as the fumes can bring tears to your eyes, and they are not the easiest vegetable to grate – if you have access to one use a food processor or electric grater.
- Sprinkle about 1tsp of salt and 1tsp of sugar per 340g jar.
- Top up with cider vinegar and seal.
