Sage Sage

This may not sound like much, but is excellent for cocktails, and allegedly has many health benefits too!

  • 500ml eau de vie (or use vodka)
  • About 1 litre sage leaves
  • 250g sugar

Making Elixir of Sage

  1. Pick the leaves on a dry sunny day.
  2. Pack them into a wide necked jar and pour over the eau de vie
  3. Leave on a sunny windowsill for at least a month.
  4. Dissolve the sugar in 150ml boiled water, then allow to cool.
  5. Strain the sage and alcohol mixture which should by now be a bright green, and add to the sugar syrup.
  6. Bottle and use within 12 months.
